Deciding on what to cook during the Dog Days of August is always a challenge. Here’s something that was both easy and cool.

I chopped up some of my supply of spring mix and added it to some cooled, cooked orzo I had prepared. I chopped up three spicy, kosher dill spears and added them along with some freshly ground pepper, onion powder, and garlic powder. I threw in some chopped green onion that I had on hand. Then sprinkled some red wine vinegar salad dressing on top. Mixed it all up and put in in the fridge for a few hours. Delish…and great the next day for lunch as well. IMG_2046.jpg
