Recipes tend to be guidelines for me. I’m sure that they are for most cooks. I found some fresh green beans on sale at my local grocery store. This is something I whipped up the other day for dinner with them.
4 cups of fresh green beans, cut into 1″ pieces
2 2/3 cups of pasta…I used Cavatappi
2 1/2 cups of low sodium vegetable broth
1 package of Homestyle Beefless tips
1 package of salt-free fajita seasoning
I use a lidded pan. I put the broth in first, followed by the green beans and the pasta. I put about a third of seasoning package in and stirred. Then I covered the pot, cooked on low for about 40 minutes. I’d recommend stirring from time to time so that the pasta is evenly cooked. Lastly, I added the beefless tips and the remainder of the seasoning, again, stirring thoroughly. It made 4 servings. When serving, I topped with vegan mozzarella.
It turned out well and the leftovers were good for a second meal.
