The other day a friend and I went to a nearby town that was hosting an art show. We weren’t overly impressed with the art show. We had more fun running through thrift stores, consignment stores and antique shops.
My friend came out of one store excited about her purchase of two tops for two dollars. I told her that as good as of a deal as that was, I did better. I got a cucumber for free. There had been a box of them marked take one…and I did just that.
You’ve heard of the expression “as cool as a cucumber”. Well, a cucumber chilled in the right marinade will definitely live up to the phrase. Here’s what I did:
- First peel the cucumber with a vegetable peeler.
- Cut the cucumber in half length-wise. Using a spoon, scrape the seeds out of the cucumber. Then cut the cucumber into bite-size pieces.
- For the marinade:
- Combine one tablespoon of vinegar (I used black cherry flavored vinegar), 1/2 teaspoon mustard (I used stone-ground mustard), 1/4 teaspoon of maple syrup, and 1 teaspoon of water.
- Pour the marinade over the cucumber and refrigerate at least overnight.
